There was a while in my life that I made these muffins weekly.

It started all because of some bad bananas and COVID lockdowns. With food prices changing and not wanting to be wasteful with the ingredients I had muffins just seemed like the best option.

The blueberry sauce was already in the fridge and about to expire so in that went as well and made the obsession muffins that I made every week. Now it’s more once a month and I change up the sauce. One time I even put in bacon bits and lemme tell you… That was amazing. Alright, enough back story. Here’s the recipe.

Ingredients:

  • 4-5 ripe (Browning) bananas
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 beaten egg
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 TBSP blueberry sauce
  • 2 1/4 cups all purpose flour

Directions:

  1. Preheat your oven to 350 degrees F and spray your muffin tins (this recipe will make 2 tins of standard size muffins and 1 mini muffins) with nonstick spray.
  2. In a stand mixer or bowl mash bananas with the melted butter.
  3. Mix in the sugar, vanilla extract and beaten egg. Once mixed add in the flour, baking soda and salt.
  4. Once thoroughly mixed add in the blueberry sauce until combined.
  5. Pour batter into greased muffin tins, and bake. Standard Muffins for 17-20 minutes and Mini Muffins 14 minutes.
  6. Cool completely on wire racks.
  7. Do your very best to not eat all of them in one sitting.
